All-in-one Breakfast Omelette

You’ll need a large heavy based frying pan for this. The Crisp ‘n Dry oil will help to stop the omelette sticking without adding any strong flavour.

Ingredients



Ingredients listed are per person

1 tbs Crisp ‘n Dry
2 good quality chipolata sausages
2 rashers good quality streaky bacon
2 eggs
½ ripe vine tomato, quartered
2 baby new potatoes, cooked, cooled and halved or quartered
Few fresh thyme sprigs, leaves stripped
Few fresh chives, snipped
Black pepper
Buttered toast, to serve

Step 1

Beat the eggs in a jug or bowl, add the herbs and season with black pepper.

Step 2

Heat the frying pan and fry the sausages in 1 teaspoon of Crisp ‘n Dry for 5-6 minutes over medium heat, until almost cooked.

Step 3

Add the bacon and potatoes and cook for another 3-5 minutes. Add the tomatoes and another teaspoon of oil and cook for a further 2 minutes.

Step 4

Spread the ingredients evenly in the pan then pour over the eggs. Cook over a medium heat for 2-3 minutes, gently pulling in the cooked egg and allowing the uncooked egg to run to the edges. Turn down the heat to low and leave for a further 3 minutes or so until set. Make the toast.

Step 5

Loosen the edges then slide out onto a serving plate or board and sprinkle with the herbs. Cut into portions and serve with hot toast.
