What you'll need
- 6 leeks, trimmed and sliced finely
- Crisp ‘n Dry spray oil
- 200ml cream cheese
- 4 salmon fillets, skinned
- 12 sheets of filo pastry
- Salt and pepper
How to do it
Heat the oven to 200°c / gas mark 6.
Coat a frying pan with Crisp ‘n Dry spray oil and fry the leeks until soft.
Cool and then mix three quarters of the leeks into the cream cheese and season.
To make the parcels:
Spray a sheet of the filo with Crisp ‘n Dry spray oil and lay 2 more sheets on top.
Put a salmon fillet in the middle with a quarter of the leeks.
Pull the sides up and scrunch together then put onto a baking tray.
Coat with a light layer of Crisp ‘n Dry spray oil and cook for 20 minutes.
Flavoured cream cheese can be used.
Keep the filo pastry covered in a wet, clean cloth to stop it drying out.
