What you'll need
- 2 tsp Crisp ‘n Dry cooking oil
- 1 onion, peeled and chopped
- 80g potatoes, peeled and chopped
- 1l vegetable stock (you can use a vegetable stock cube for this)
- 350g frozen peas
How to do it
In a large saucepan, heat the Crisp ‘n Dry cooking oil on a medium heat.
Add the onions and cook until soft.
Add all the other ingredients and bring to the boil.
Turn down to a low heat and simmer for 15 minutes.
Blend until smooth and serve.
For different flavoured soups, just change the peas for your favourite vegetable or whatever leftover vegetables you have in the fridge.
You can use frozen minted peas for a change.
